More meal prep

I made a few more dishes last night to eat for lunch or dinner this week. Pretty excited about both. These dishes had similar ingredients so it was convenient to make them at the same time. Check out the recipes below. Both of these recipes come from  Emily Schromm's free 7 day challenge. Check it out for more ideas! No Bean Chili Ingredients 1 onion, chopped 2 bell pepper, chopped 4 garlic cloves, minced 1 pound ground beef (I used beefalo) 1 pound ground pork 1 tbsp chili powder 1 tbsp ground cumin 1 tsp dried oregano 1 tsp cayenne pepper 1 tbsp apple cider vinegar 1 tbsp coconut amino 1 tbsp honey 1 (28 ounce) can crushed tomatoes Salt & pepper to taste Directions 1. Melt ghee in a large pot over medium heat. 2.     Add chopped onion, bell pepper; cooking until tender, 5 to 10 minutes. 3.     Stir garlic cooking for an additional minute. 4. A New Challenge

Today I begin a new challenge. You can learn more about the challenge are started here . I track my food and water intake in an app called My Fitness Planner. I am hoping that through this challenge I can learn a new way of looking at food. To start the week I spent some of yesterday meal planning and prepping. For breakfast I made kept it simple. Ingredients 2 red potatoes, cubed  1 cup chopped mushroom 8 oz baby spinach 8 eggs, beaten Salt & pepper to taste 1/2 cup cherry tomato, sliced 2 green onions, thinly sliced 2 tbs EVOO (Coconut oil or Ghee also work great) Directions 1. Add oil or Ghee to pan 2. Cook potatoes in large nonstick skillet over medium heat until tender 3. Add in mushrooms cooking until being to soften 4. Add in spinach cooking until wilted 5. Low Carb Bagels with Almond Flour

Last night I was swiping through facebook I came across this recipe from Wholesomeyum  I instantly got up and went to the kitchen. They were quick & easy to make. My attempt did turn out more like a biscuit and less like a bagel as it cooked but still so good. My husband even requested I make more. Plus this morning I was able to enjoy this yummy egg sandwich for breakfast!

I decided to try our one of the 21 Day Sugar Detox non-sweet treat recipes. Just 2 ingredients Kombucha & Gelatin. There is not a lot of flavor but you do taste the kombucha.

Almond Flour Crust Pizza

I am in the middle of a 21 day sugar detox. Which, if I am honest, I am doing horribly at. The first week went great. I felt good and had lots of energy.  Week 2 was a different story. I tried to cut out dairy too and it was too much. I wasn't getting enough calories. So going into week 3 I have a new plan. I spent the weekend making some new recipes. I am also planning on extending my detox by 1 week. So I was determined to give myself a lot of options this week. I made pizza using this crust recipe. We topped it with toppings and yum!!
