More meal prep

I made a few more dishes last night to eat for lunch or dinner this week. Pretty excited about both. These dishes had similar ingredients so it was convenient to make them at the same time. Check out the recipes below. Both of these recipes come from Emily Schromm's free 7 day challenge. Check it out for more ideas!


No Bean Chili
Ingredients
1 onion, chopped
2 bell pepper, chopped
4 garlic cloves, minced
1 pound ground beef (I used beefalo)
1 pound ground pork
1 tbsp chili powder
1 tbsp ground cumin
1 tsp dried oregano
1 tsp cayenne pepper
1 tbsp apple cider vinegar
1 tbsp coconut amino
1 tbsp honey
1 (28 ounce) can crushed tomatoes
Salt & pepper to taste

Directions
1. Melt ghee in a large pot over medium heat.
2.     Add chopped onion, bell pepper; cooking until tender, 5 to 10 minutes.
3.     Stir garlic cooking for an additional minute.
4. Add beef and sausage into onion mixture. Cook and stir until meat is browned, 10 to 12 minutes.
5. Add in remaining ingredients stirring until combined
6. Bring to a boil, reduce heat to low, and simmer until flavors are blended, 30 to 60 minutes.
7. Remove from heat and allow chili to cool slightly. Portion into 6 servings; refrigerate


This is so good. Definitely a new favorite! I was low on calories so I had 2 servings of this one last night!!



Steak Fajita
Ingredients
1 lbs flank steak
3 bell peppers, sliced
1 red onion, sliced
1/2 tbsp chili powder
1/2 tsp paprika
1/2 tsp garlic powder
Salt & pepper to taste
1 jar all natural, organic salsa Chopped Fresh cilantro; optional

Directions
1. Cut flank steak into thin strips
2. Combine chili powder, paprika, and garlic powder; sprinkle mixture over steak .
3. Heat 1 tbsp ghee over medium heat in large skillet
4. Once hot, add steak allowing cooking until browned; removing and setting aside once done
5. Return pan to stove, add 1 tbsp ghee to skillet
6. Add onion and pepper to skillet cooking until soft
7. Combine steak, pepper and onion gently tossing to combine
8. Evenly divide mixture into 3 portions
9. Top with salsa and cilantro if desired
10. Store in the refrigerator
